Anyone know what this is on my bacon?

Hi,
Here is a slab of pork belly using a wet brine cure from amazingribs.com
Smoked it to 150 at 225 degrees and let it rest in plastic wrap overnight. I opened it today to start slicing it up and saw a bunch of this. It looks like gelatin/jello. I initially thought it was fat but this literally has the consistency of jello. Smells fine (smells good actually). But I never saw this before. Anyone have any ideas? Safe to eat?

Yep it's gelatin. You get it when you cook the bones, skins and connective tissues that are in the meat.
