Hey! I have been lurking for a short time now and have read a ton, got the 5 day email course, and look forward to doing some smoking. I have never smoked anything in my life, and while I am awaiting the arrival of my new large GSSM I received a free horizontal charcoal smoker from a friend. I played with it all day yesterday, sealed it up with black rtv, and I think I have it down to where I can maintain 220-250 pretty good. I am going to do a beer butt chicken (done a ton on the grill but never smoked one) using mesquite chunks. I will provide a Q view when I get going as I know how important that is.  Just wanted to say thanks for a ton of awesome info and a great site!!!

Welcome to the SMF. I bet you can't wait to get your new smoker. Smoking is a lot of fun and you have come to the right place to learn. Good luck on the chicken today. Make sure you don't go too heavy with the mesquite as it can be very strong. A little goes a long way especially with mesquite.

Thanks guys, I have tried some of the BBQ recipes on here with great success so far. I am thinking just two junks on the mesquite for today...hoping to smoke the butt can chic for about 3 hours or so, maybe longer if necessary, I know I can cook it quicker, but I like the idea of low and slow

First off welcome to SMF. You'll like it here cause there are alot of really good folks that would just love to help you with anything to do with smoking. Now we like having new folks here to give a new prospective on some of the ways we do things around here. then you will have a method to your newly found madness and believe me it will be a madness. Then when you start smoking things you will have to learn how to post the pictures / Qview

Now the next thing you have to do is run out and get something to smoke. Then just smoke it and if you have any questions just post  them here and we will answer all your questions that you might have. Oh yea there's no stupid questions we were all there in the beginning and we just really like to help others enjoy the fabulous smoked foods that we do. So again
