First Brisket when to start

Going to be smoking my first Brisket a 7lb flat from Sams. I put a good coating of Jeff's rub on last night. Should I start tonight around 1am or so or wait until the morning early and start? Going to try and slice it and serve with twice baked taters and bread.
 
I would start it in the early morning 6-7 am and you should be fine to eat maybe around 5-6 in the early evening . That should give you alittle lea way for it can sit in the cooler for many hours or leave a little bit of time for a stall if you have any. But then you can always eat alittle later also. You can plan about 1 1/2 hours per pound is a safe maybe time after all each brisket smokes at a different time.
 
Yea, I try to allow close to 2 hours/pound, then I have a few hours of cushion time in case I have smoke chamber temp control issues/weather.

I'd problebly start it first thing, never have been real keen of staying up with the smoker... And setting the maveric next to the bed, just keeps me waching it ... lol
 
Well I got home last night about Midnight after going out for drinks for my girlfriends birthday and went ahead and got the smoker ready. I put it on about 1:15 and got up every 45 mins to check it out and add some chips. Right now at 9:15 I am at 167 think I am going to foil at 170 and take it to about 190. I will post up a pic before foil.

Here it is after pulling about 195 and FTC for about 5 hours. It was very good I will do it like this again for sure.
 
It looks good. Glad you were able to get a good jump on it & get it out of the way. Now you have a decent idea of how to handle the next one.
