I've never smoked anything, but planning to set up a plywood type smoker for Arctic Char this summer. finally have a decent boat so I can go fishing this summer.
Catch alot of Trout by winter jigging and summer rod'ing up at the lake. Shoot Caribou for fresh meat. We dry them traditionally; did about 12 last year. sliced up the whole carcass and dry them naturally on racks that are 4' x 12-16' long on chicken wire, we have 4 of them. Dried in the sun and wind in the spring before the bugs come out.

I've been perusing this forum for about 2 months; what a wealth of information. Mouth watering information.

Welcome to the SMF. How long does does it take for a post to get there? LOL I would also like to see the caribou drying technique..(The traditional way.) I don't know any way this will be fun to see. thanks in advance.
 
First off welcome Caribou to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.

thanks for the warm welcome. Even tho at time's it's minus 40 without the windchill; friendship and family warms.
