Hello from Chicago

I have been smokin' for almost 30 years first cutting my teeth in my teens in Oklahoma on a 10' long x 5' wide brick smoker built in the late 30s. After moving to the Chicagoland area almost 10 years ago, not having a backyard big enough for the smoker I would want and also not having access to the supply of hickory, I opted for a Cookshack and absolutly love it. I also have a Weber gas and a 22.5" Weber I bought 30 years ago.

I look forward to checking the site out, sharing and learning, but the way I found the site was researching my new hobby of sausage making. My first batch was 20# of hot Italian, my second batch was 10# of summer sausage and yesterday I made my 3rd batch, 10# of Buffalo chicken sausage.

I look forward to chatting with everyone!

You found the right place there are a bunch of us that share your hobby.

How long have you been making sausage?

There will be some folks along here shortly welcoming you and explaining how to post some Qview.

Lots of sausage recipes floating around as well.

About a month. My wife has been making cheese for about a year, (wonderful cheese), I broke out my old brewing equipment and converted to making wine and one of the cheese forums she hangs out on had some folks that make sausage. I commented that I had always wanted to try it, so here I am. Bought me a grinder, 5# verticle stuffer and a way I go.

How to post Qview to Forum:

When you uploading to Photobucket I always use the Large IMG setting, 640 x 480 it is a nice size...

Everyone here enjoys seeing the Qview so be sure to post plenty of pics...

Large ones that us old people with bad eyes can see.

First off welcome to SMF. It sounds like you are well on your way to be an outstanding new member of this fine site. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.
Here's a link to photobucket it's free and easy to download pictures. Then if your really new to smoking Look up the E-course.
It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.
