This last weekend I did my first smoked turkey. On Wed night I made up a brine that I soaked the turkey in until Sat morning. Sat morning I injected the breasts with butter mixed with cure. I then rubbed it with olive oil and rubbed cure onto it. I smoked it at 225 for 3 hours with cherry and hickory, spritzing it with Apple juice every hour or so. Then I raised it to 275 to cook to temp. Here is the finished product.


The injection spot looks like a brown streak as the butter soaked in, but the spices stayed in the injection site.


We also put a cake pan under the bird to catch the drippings and my wife made gravy out of it. Delicious.


Thanks for looking. The result tasted great. Shared some of this with co-workers and they couldn't believe that this was my first attempt on this. Will have to do again, but maybe two birds or more at once, it doesn't seem to last.

I plan to do a turkey in a couple weeks. I can't wait (gotta finish the leftover loin and PP I did this past weekend first).
