Well tomorrow is my last night on dinner duty so I started getting ready the Tri-Tip:

3lb Tri-Tip with some fresh roasted garlic and a nice simple rub:

Here is what it looked like after I inserted the gralic into the meat and did a nice patdown with my rub:

Tomorrow I will smoke it for about an hour and finish it off on the grill and I'll post more Qview then.

Any ideas on how long you think it will take to grill after the 1 hour smoke? Trying to plan it so dinner is done at 7:30
 
My neighbor does the whole thing in the smoker. It is great. Takes a bit longer than grilling but seems to be worth the effort.
 
From my experience it will take about 5-6 min per side depending on the temp you are cooking at - use the probe to be safe - overcooked tri-tip is like shoe leather
 
Ok, put it on the smoker for about an hour and then just a quick sear on each side and I have to admit it was one of the best tri-tips I have done. It ended up in the med range which is more than I like but still really good. maybe next time a little less on the smoker to make sure I don't go over the med-rare:

Try doin' it on the smoker the whole time. You'll have some real tender tri-tip on your hands

If you really want the crispness on the outside, then you can just throw it on a super-hot grill for a minute or so on each side.
 
after 6 hours of study I still can't Q View. send me to Kindergarten. I get lost somewhere between Photobucket and SMF.When I ask someone about cut and paste they just laugh at me. Although I am encouraged---I got the pic from my cell phone to photobucket after only 2 hours. Sorry about the qView
