I posted pics of a similar dish. It is exactly the same as the recipe above, except I used two cups of cheese (one cup of mozz, one cup of cheddar, mixed in with the potatoes) and sprinkled dry onions over the top of the dish.
It was in the smoker @ 250 for about two hours. I watched it after the first hour and coverd after the topped browned to my desire.
