I have a freind that has givin me 2 complete mule deer hams, and being from arkansas, there are no mule deer here, and i am wanting to smoke these bad boys up, but havent a clue on how to do it. Do i just need to smoke them as i would a whitetail, or is there some other way seeing how they eat differant grasses and sage where there from. any help would be great.

Thanks,

if you're familiar with what to do with a whitetail, then do a mule deer exactly the same. we have both whitetail and mule deer here and i have found that all things being equal, they will taste the same.

differences in taste depend partly on diet but mostly on how the deer was treated before, during and after the kill. ask your friend if the deer was aged at all before it was cut up. i usually hang my deer (either species) for 10 days to 2 weeks, but i live in a climate that can handle that where nights are cold and days are cool that time of year. in a southern climate 2-3 days should be good.

Yea, it was hung while they were in colorado, and then packaged, so i will just do it like i do the whitetail.

Thanks for the info.

good luck! as long as the meat was well-taken care of, everything shoul be good. if you ahve any concerns or questions, please let me know or send a PM.
