Did Some Turkeys

I did 11 turkeys this week. Injected and started brining on Wed. Sat in the new big brine bucket (Rubbermaid trash can), then into the smoker on Sat. morning. Pulled this a.m. after hitting 155 deg. I use an old vaccine gun to inject, use Ryteks poultry brine with maple extract added. I rebag in the original mesh bags which I have washed and soaked in vinegar. They hold up very well, and leave a nice appearance. I use shower curtain hooks that I've modified to hang in the smoker. I can get 12 in perfectly. Thanks for taking a look.

Did you cure these it almost looks like a couple packages of cure in one of the pics?

Yeah they are definitely cured. Ryteks brine recipe is very basic; sugar (or specifically powdered dextrose) salt, #1 cure. I had to make 10 gal. in order to have enough to inject and cover all the birds.

Yea I cure all my turkeys also inject them. I do mine low and slow in the smokehouse. I will be doing 4 turkeys and a 16lb ham in the smokehouse tomorrow. I figure about a 12 hour smoke at 220 degrees with a 170 internal pull temp for the birds. The best smoked turkey on this side of the Blue mountain.
