Tricks that I taught myself this morning....ok not really tricks. but humor me.

I mixed up some lunch meat last night that had a boat load of honey in it. Needless to say it was extremely sticky. So after mixing, I packed it in a gallon bag and let it cure for 24 hours in the frig. When the time came to load the stuffer I cut a corner off the storage bag and squeezed it like a tube of toothpaste into the stuffer. it worked real smooth and never got my hand near the the sticky mass.

While I was trying to stuff these 4" casings by myself and needed an extra hand to hold the wound up casing while I tied it. I took a clap that I use for holding my stuffer to the counter and clamped the tightly wound casing. it actually worked good. the long leg of the clamp kept it from spinning while I tied it up.

It's that mother nature thing if you need it you can create it. Or come up with something that will do and you did the doin thing alright. Great mind work Dan.

I like the clamp...lol..great idea. I'll just keep using my kids till they leave the casa...then I will need a lot of clamps to replace these guysPDT_Armataz_01_12.gif

I do something similiar to the clamp that was mentioned above.... My mahogany casings I get for doing summer sausage come pre-tied on one end. After I have the casing stuffed I start to twist the open end of the casing til I can't hold on to it with out slipping in my fingers ..... then I have my son grab the needle nose pliers and pinch it and then I continue to twist some more til the casing is nice and taunt. I don't get that wrinkled casing no more doing it this way! It works really good.....

A more simple way is to use hog rings.

I use hog rings when I do mine, but sometimes it's hard to get it real tight with one hand while putting on the ring, specially when you fill them a little too much.

Looks wonderful. If only the wife ate more sausage I could justify making some.. icon_mad.gif
