Turkey issues - Confused

Hey All,

Doing my first bird using Tips Slaughterhouse recipes. I think this bird is cooking way too fast. Everyone says you need to get through the 40-140 in under 4 hours...I cruised through it in two! Now this is a small turkey...a hair under 10 pounds. It's only been 2:12 and it's already at 145.

I started at 9am, thinking it would take 6-6.5 hours so the wife is planning everything else to finish around 3-4pm. I don't want the bird finishing at 1pm! Should I go low & slow for a while? Or is this how Turkeys cook?

I guess it is possible my meat probe isn't in a good spot and is reading hot as well...

Woops! I did the same thing last year. A bird under 10lbs is going to cook in about 2.5-3.5 hours on the smoke. This is a pleasant discovery to make after you woke up at 5 in the morning to eat at 1 PM.

What temp is the smoker running?

Try readjustin the temp probe.

If ya get the same readin, I'd turn the heat down some seeins yer through the danger zone, just don't go to far because then ya may not finish on time. If yer with in an hour a yer expected finish time ya could foil an wrap in towels an cooler it.

Thanks for the quick replies y'all.

I was running at 300-325 per Tips recipe. I have since backed her down to 225. There is no danger of finishing late at this point! I need to stretch this baby out as long as possible.

Will try re-poking the probe too.

This is at 2 hours 45 minutes. It sure does LOOK good!

More Q-View!

Well, I left it at 225 until the last hour. Cranked it back to 300 and finished at 170 exactly at 3pm! Now she rests...waiting with baited breath!
