smoked cornish game hens

Game hens thawed
4 Cups cold water
2 Cups apple juice
1 Cup brown sugar
1 Teaspoon rosemary
1 Teaspoon sweet basil
DIRECTIONS
Combine water, apple juice, brown sugar, rosemary, and sweet basil in a glass or plastic container. (in my oppinion glass is better so you do not get the flavor of plastic with the brine) set aside. Clean the game birds inside and out. place the game birds in the brine and put in the refridgerator for at least 12 hours. When the birds have soaked 12 hours take them out of the birne and put them on the smoking racks and put them into your smoker. (Smoke to desiered smoke flavor I use 2 panfuls of chips (Apple chips or Maple add a good flavor)) Keeps game hens in smoker/cooker until done.
 
I have always grilled our cornish hens. I have been thinking that smoking them would be good. But I have never smoked them yet. Your recipe for the brine sounds good but I like to throw in some more spicey kick to it for us.
 
you should........they make fo a nice quick smoke, around 2 hrs or so.
