First time around I pulled it to rest at around 200, and I couldn't get it to pull, so I sliced it.. Still good though..

So this time once it got to 205 I ditched the wireless thermo and did the fork-turn test every half hour until it was done..

That did the trick.. 3.25 lb chuckie, foiled at 165, took 5 hours @ 230-250.. Stalled for an hour at 150.. Rested it for 2 hours in a cooler..

Turned out great!
