Personally, I think pork fat rules. fat equals flavor. If you want healthy, eat Tofu! icon_smile.gif I started out making my sausasage by just grinding up a pork butt, but felt it came out "too lean" so now I always add a little additional pork fat. Snack sticks might be a little different, you could probably get away with 15% fat.
