finally gettin around to posting some pics from my whole hog smoke.it was awesome! started out by cutting the breast section open, then reaching inside to cut the ribs off the spine so the pig would lay flat. being sure to NOT poke through the skin so it will help hold some liquid during the smoke. i injected it with about 1 1/2 gallons of apple juice and coated it in rub before the smoke. enjoy the pics!
