Got a new bottle of Z Nothing Beyond this week, so I decided to fire up another test batch of wings.

Started them off with a coasting of EVOO and some Tony Creole's rub, a dash of coarse black pepper and some ground cayenne pepper.

Now for the Z Nothing Beyond sauce, well let me tell ya, this hot sauce is nothing to mess with. Made with 4 million SHU extract, it brought me to my knees the first time I ate a small drop off a teaspoon. I diluted it with a pre-made hot wing sauce called Smokin' Joe Wing Sauce. Nice orange color, with a bit of stick to it, I added about 2 tablespoons of the ZNB hot sauce to it on a small boiler pan and heated it up to coalesce. I'll post some more pics in a bit when they come from the smoker and get sauced.
 
Sounds like some good spicy wings.

These things came out tangy as hell! The sauce cooked down in to the skin, leaving the appearance of no sauce at all, but they sure pack a punch. The flavor of the Z sauce does stick out if you use it in moderation with another sauce. I ate these with a Tripel Ale from Legend Brewing Co. out of Richmond, VA., the sweetness of the ale matched up nicely with the hot of the sauce. I used mesquite chips to smoke, probably a handful every 1/2 hour from the time they went in until they came out, including the 45 minutes of sauce time in the smoker.

Excellent wings there, Grue! Made them just how they are supposed to be....not drippin' with sauce, but nice and dry with that "tangy" type hot sauce that's grilled into them~real nice. Plus, that combined sauce you made sounds like the perfect wing coating.

One question tho...how do you guys up in Michigan get that great Legend Brewing Co. beer and us here in Missouri don't?

I spent many hours at the Legend Brewery overlooking the James "Rivah", drinking their custom brews and loving their wings and burgers. As a matter of fact, that's the first place I took the wonderful Mrs Rivet to eat at when we met! Glad you get to drink that good beer with those awesome wings you made. Bravo!
 
Rivet: I went down to see my family in Richmond, VA a couple months ago. I sought advice on BeerAdvocate.com about great beer places to check out whilst down there and Legend was one of the places that came highly rated.
 
Now those wings look like something I used to eat when I was younger now I just look at them and take my little purple pill every night. I like some hot stuff but nothing like I used to eat. Dave's insanity sauce they say you can clean your drive way with that stuff and get up the oil stains.
