This weekend I smoked my first fatty. I decided to go with an apple pancake fatty.

I used Neese's Sausage in a square. I mashed it out in a ziploc bag. I then loaded it with 6 Eggo mini pancakes and some apple pie filling.

I had trouble rolling it.

Once it was finished, it started coming apart when I tried to pull it off the rack. The smell was incredible!

Please offer any helpful tips. I've seen a fatty tutorial on here, but couldn't find it when I started working on this one.

Pretty good for your first fattie, how did it taste, It sounds good with sausage and apple pie filling.

I had a blowout too. Somebody told me that the sugars in the sauce from the apples will break down the fat in the sausage causing it to have some structural issues as you discovered.

Also, you should give a go at making a bacon weave. Not only are they cool to look at and to impart a little bacony goodness, they also do a great job holding everything together
