So I love using ShooterRick's Snake Bitten Rub. I actually have a shaker of it I put on lots of things, found out last night it turns plain cottage cheese into a GREAT snack!
So, I figured that since the rub is good on chicken then why not try it as a brine?

Since it was a brine I did 4 cups of water and 1/2 cup kosher and brown sugar, the other ingredients I left the same.
I was trying this out on leg quarters.
I also decided to do an apple juice brine.
Could have sworn I wrote the recipe down but can't seem to find it.
I know it was apple juice, brown sugar, black pepper, crushed red pepper, a few cloves, and kosher salt.
Also did a boneless turkey breast. Again the recipe seems to have vanished on me (maybe gremlins) but here are the ingredients used.
Everyone into the fridge for the night turning poultry occasionally.
(always make sure to cool brine completely before adding meats)
Next day out of the fridge, resting before hitting the smoke

Apple brined quarters
turkey breast
My brother-in-law also wanted me to throw on some chicken he made.
Pounded flat, stuffed with mozz, tomato and I think basil then wrapped in bacon.
Smoked over hickory at about 250.
There was a 30% chance of rain that day and we sure got it. No pics because I was busy with my brother-in-law holding beach umbrellas over the smoker to stop the half hour torrential downpour, it was horrible!
With all of that mess I didn't end up getting all the pics of finished product I wanted, but I guess some ar ebetter than none.
Turkey breast pulled off and cut
Snake Bitten had to get a pic of it reheated the next day
Stuffed chicken
That's it for the pics, I wish I had gotten some better ones but oh well.
Now my verdicts.
Didn't try the stuffed chicken.
Apple brined was very good, nice sweetness to it
Turkey breast was ok, not anything super great but still good.
Now, the Snake Bitten Chicken, great!
My only, and I mean only complaint is that I should have increased the amount of the snake bitten ingredients into the brine by another half or maybe doubled it since the brine had 4C water the flavors weren't as strong as I would have liked, so next time (and yes there will most definitely be a next time) I will just add a bit more to the brine, then try rubbing a few before the smoke also.
