Hello from Colorado. I have been a BBQ addict for many years. One large wood / charcoal grill, one gas grill, one webber charcoal (the round one's for turkeys) and user of a big chief smoker that I used for fish and jerky. Plum wore the thing out.

Now it's time to move up to a smoker that I can do meats that require temps greater than 150. Looking at the 38inch Smoke Hollow after reading the forums here. I am really happy I found this forum. Great amount of information and experiance here.

Thanks for the welcome! I am always looking for new ways to wow the family with good eats. Some great stuff in here. hopefully I will be able to add to the recipe mix with some of my game recipes. I got a lot of Elk and goose to grind this year for sausage and snack sticks
