Smok'n N SoCal

I'm new here today, but won't be the new guy for long. I've been que'n since I was tall enough to singe my hand on a burner. Love to cook. Came here because I just bought a new Masterbuilt 40" Smokehouse, and thought I'd check out the blogs before I get started.

I've been using a 30" Professional CharGriller with a side smoker box, and it limits me to smoking about 9 racks of baby back ribs at a time. I also use a Grand Hall natural gas 34" 3 burner (with a back infrared burner), and side burner, as well as a 37" dual chamber, front loading Professional Brinkman, (I sear the ribs on here before smoking). I still don't have enough cooking space for the number of people at my parties. There were between 40 and 50 people at my last cook out.

I'm hoping the Masterbuilt smokehouse will increase the amount of meat I can cook at one time by at least enough for another 10 people or so.

My last BBQ saw 9 racks of baby back ribs, 6 tri-tips, 2 dozen chicken thighs, 1 package of Kalbasa, 1 package of hot links, 30 ears of corn, 12 pounds of fingerling potatoes, and 2 costco sized packages of pineapple wedges... could be I'm forgetting something - ahhh the baked beans on the side burner, and 3 loaves of sliced, garlic buttered, and grilled french bread.

Gots to run for now, will come back after trying the smoker, and will let you know how it goes...
