I've been using my 40" MES all summer and really enjoy it.
I'm used to cooking my baby backs on my ceramic cooker at 225 degrees for about 4-5 hours. When I cook the babies on my MES, at the same temperature, they cook very fast compared to the ceramic. It only takes about 2 1/2 hours for the 3 racks I usually cook. I've ben told the ceramic cooked ribs are more tender than the MES.
Anybody tell me why?
 
My thermostat has been pretty accurate, but I've read about many that aren't, You might want to check the temp against a digital thermometer. My Babybacks do pretty good on the 2/1.5/.5 routine and are tender.
