Howdy guys! I'm as noob as they come and I'm checking in from Houston, Texas. I just got a char-grill pro w side firebox two weeks ago and have grilled on it already, but am very new to grilling/smoking. I've been lurking the forums for a while but am ready to participate and get to cooking!

My neighbors have been having friendly grillin' competitions and I feel left out. Help me kick their butts! :)

Houston I love it there! I have a bff that lives in Houston with his lovely family and some other friends that just moved to Friendship, to be close to MD Anderson as Terry has brain cancer. In any event, we will be out the the last w/e of Feb 09 for the BBQ comp at the Houston Rodeo...
can I tell ya, on Sat we will be at Saint Arnolds, and Sunday we will be at the Ragin' Cajun eating about a jillion LBS of crayfish.....oh did I mention the Lone Star beer??
By the time we get out there you will be out smokin' me!

Hey Noob, welcome aboard, if you want to blow your neighbor's socks off, I'd recommend Meowy's pulled pork approach found here:


Ends up great every time...one piece of advice based on experience, the mistake I made early on was to think more smoke was best (thick, billowy smoke), but try to get your fire so the smoke is consistent, but relatively light the elusive "Thin Blue Smoke"...dig around on the site some, you can find nearly ANYTHING here. Hey noob, welcome to smf! One of the first things that you want to do with the chargriller is ignore that thermometer in the lid, as it is nowhere close to accurate. Go to wallyworld and get ya self an oven thermometer. i think that they are 4 or 5 bucks Put it in the smoke chamber right next to where ur masterpiece is developing. Get used to the operation of your unit and then check out some of the mods that have been posted to make it more better...err... efficient. cool.gif
