I am really new to smoking. I recently got 2 Traegers a Tex and a Lil' Tex. One for home and one for out here in the country. I live in SW Iowa and have a famliy farm that be like to go. I have really enjoyed smoking on these Traegers. I haven't goofed up anything to bad yet. I have done a couple briskets, pork spare ribs, some ABTs and few FATTTIES

I have some drumsticks on the smoker right now. I even picked up some fancy racks at Lowes yesterday. Another great idea from SMF!

Well.....I guess that is my roll call. Just wanted to say hi.

Oh yeah....you may be wondering what a Draht is. It's my pup. It is a versatile hunting dog called a Deutsch Drahthaar. See going to be my Pheasant hunting machine. Can wait to smoke a pheasant!!

Welcome to SMF! And yes..pheasant smoked is the Food of the gods!
I cure mine, in a curing brine with onion, rosemary, celery and black pepper. then a bacon grease rub... Then a low and slow smoke till a nice golden color. Oven finish wrapped in foil till tender. mmmm!
