Step 1 of Smied Chicken with Q-view!

SMIED - Smoked then Fried

So the Smoked then battered and fried chicken experiment is off and running. I had brined the chicken and then soaked it Wednesday. Then I coated it in a mix of buttermilk and tobasco overnight. I put it on the smoker about 3:00 today. I pulled it at about 5:30 when it was at 160 degrees. It's in a pan, tented with foil right now waiting for the deep fryer to heat up.

I'm going to double batter with self rising flour. For the wet, I use a combination of buttermilk and tobasco.

Here are the pics before it went on the smoker and when it came off the smoker. More pics of the final to come soon.

The final Smied chicken was a hit!
Unlike regular fried chicken that you have to cook until the chicken is done, and often the breading gets too dark, this was almost already completely cooked from the smoking, so I could take it out of the oil as soon as the coating was nice and golden. It was moist, smokey and delicious.
I added my rub to the flour when I breaded it. Flour, buttermilk, flour, into the oil for a few minutes until golden.

While I will probably smoke chicken without frying it...I will probably never fry chicken again without smoking it first.

BTW...the two wings I turned into buffalo wings by adding buffalo sauce when they were done.

Congrats on a great smoke, and thanks for the Q View too! I like the way you introduced some heat to them fryers!

I know you like chatting about Salmon fishing in Washington, but on your pics, the last two, almost look like a square "loaf" of chicken...Are these just "LARGE BREASTS"? in a squareish shape? Just askin....Looks great!

Your mantra makes great vittles, the other one usually requires an emergency room visit, LOL.
