I think we hit the plateau. Definitely moving slower now. Six hours and 45 minutes in it is at 161. Took a long time to get there from 150. Will foil at 165. Here is what it looked like at the last spritz.

Think I'll take a shower, have some lunch and wait for the ET-73 to tell me its 165. Then maybe relax on the patio with a cool one while it finishes

Hope everyone else's smokes are going well.

Been stuck at 160 for about 2 hours now -- peaked at 162 then dropped down during a spritz. I know it's the plateau and I'm cool with that -- don't want to rush it -- doesn't matter if it is ready for dinner or not -- but my question is this.

Should I go ahead and foil it now or wait until it hits 165?

If ya like a darker bark, wait. I foil mine at 175-180, but thats just me, I like bark.

Woof! biggrin.gif Me too!

However, things just got a little complicated. My wife and I were planning to go to the movies tomorrow night (so as not to interupt my smoke todaywink.gif ) but she couldn't find a babysitter. So she's on the phone all excited and tells me she found one for tonight. So we are going to the 7 pm showing of "Sex and the City". (The things we husbands do . . .)

So I went ahead and foiled it at 162 (about 30 minutes ago). The wind is driving me nuts. It blew the Afterburner out a couple of times and is playing havoc with my temps. I have about 3 hours before I HAVE to leave so we will see how things go. I may have to FITO (Finish In The Oven) -- I know, I know -- and leave instructions with the baby sitter to wrap it in a towel and place it in the cooler and pull it when I get home.

Ah, the best laid plans etc, etc.

Into the oven it goes . . .PDT_Armataz_01_07.gif . . . the kids are going to the babysitters instead of her coming here. Sooo . . . we'll see how close it gets before 6:15.

If I have to take it out of the oven and cooler it before 200, can I stick it back in the oven and take to 200 later?

Too Bad, a good butt gone bad because of a "chick flick". I gotta get ya a subscription to "maximized man hood".PDT_Armataz_01_28.gif I wouldn't try to bring it back up tomorow, get what ya can tonight and chalk it up to,,,,,,,,,,uh um.... LOVE!biggrin.gif

just take it from the oven into the cooler and see what happens. Probably be ready to pull when ya get home.......if the wife says its ok of course!icon_smile.gif

Babysitter called. Had something come up and cancelled.

Um . . . darn.wink.gif

So proper butt cooking can continue . . . well at least as far as the oven is concerned. It's at 190 now.

I hope my first brisket is not this complicated. May have to schedule one -- no -- make that TWO vacation days for that one. biggrin.gif

No worries, I've got pretty thick skin. biggrin.gif I heard on a radio show that there are only two types of men going to see Sex and the City . . . men that are gay and men that are hoping to get lucky . . . and I'm not gay.wink.gif

I fell asleep in my chair (been a long day) and my daughter woke me up aboot 6:45. Butt was at 205. It's in the cooler resting now. WOOHOO! Not much longer and we will start pulling.

Sounds to me that you did get lucky. Ya didn't hafta go see that stupid movie! LOL.

You know its good luck for future smokes if ya sleep with the first Butts bone under the wifes pillow!biggrin.gif

Oops. Too late. The dog already got it. Set out a pan with some of the pickin's and the bone by her house. She grabbed the bone and ran out to the middle of the yard and started gnawing away.

Well i pulled the foil after an hour in the cooler.

Bark was kind of soft but I quess that happens in the foil. Still yummy though.

Here it is pulled.

Man, it was tender. It just fell apart pretty much on its own. I didn't even need forks. Not much left. My wife LOVED it. That stuff is good. Thanks for all the help. Hope to try a brisket soon but the way my schedule is, it looks like it will be sometime in August.
