This is the best tasting meat thing I've ever created. Perfect amount of smokey taste with a slight spice and sweetness. Very pleased.

Slapped on mustard then used an off the shelf rub (stubb's bbq) and added some cayenne pepper and a little cumin.

2 hours smoked at 250F (only 3 chunks of hickory at a time, very small amount of smoke coming out of the smoker)
a bit less than 2 hours foiled at 275F
45 minutes unfoiled at 250F, no smoke.

Apple juice spritz during uncovered stages...

Your ribs look great! Good job. I'll look for that rub in the store. I love Jeff's but always willing to try other flavors. I like the idea of cumin too.
