Well I took the plunge and bought a 21" classic horizon smoker. Wonderful thing it is. I've been smoking meat a few times with a brinkman wet smoker. I'm a BIG fan of BBQ food. I travel for work a lot and I try to find BBQ in every town I visit. I'm in Ithaca, NY today - not sure if I'll find anything here. I'm from the great state of MN btw. I've tried ribs on the smoker first, turned out alright, they were a little chewy. Next challenge is my 21lb slab of pork. I just got done buying over 600lbs of meat - whole hog ($175 for the whole thing plus processing), whole lamb, 1/4 cow. Anyway, I look forward to reading various post on this site and getting some great advice.
