Just 2 comment on rubs. Use whatever mixture you want. I substitute Turbinado sugar for the brown sugar in Jeff's rub. Turbinado burns at a higher temperature, so it doesn't get as bitter as brown sugar can get. I add a "bit" more of the sugar for butts, and stick to the recipe for ribs.

Lastly, use fresh spices; cracked fresh. It really makes all the difference in the world. Around here, we have several Dutch markets. The are the best place to get spices.
