Today I finally had the chance to try my new WSM. I'm trying the minion method with a smaller load of charcoal because I don't need the longer cooking times.
First mistake I made was not letting the smoker get to temperature before I added the food and it took awhile to get to cooking temperature. Now I am settled in at 250 degrees and it's looking good.
I need to remember that the vent are hotter then my CCSV which I could adjust without gloves. After 2 blisters I think I am learning :)
Couple early views included, 2 turkey/chicken meatloaves, one with a little Sweet Baby Rays Honey Chipotle in the mix. Stuffed peppers are done.
Meatloaves are almost done. Have a turkey breast still going, injected with fruit juices, seasoned with garlic and onion powder. It's at 145 degrees. Just threw on an onion and a few portabellas.
