Been away awhile. I have 1 pork tenderloin, 2 turkey breasts, 1 flat cut brisket, and a link of Jimmie Deans. All waiting and begging to go. Have scored enoegh Pecan for the event. First time out with Pecan so any suggestions will be appreciated. Will take pics and let all know how it goes. Any great things to do with the sausage? My current plan is to stuff with onion, peppers and some cheese.

Do to recent severe weather and many friends doing repairs we postponed the big smoke. Went ahead and threw the tenderloin and fatty on to help some folks that can't cook yet. No pics coming on this smaller cook as I am concentrating on provideing some needed food and helping clean up.

Will let all know how things go and What I think of Pecan.
All is ok with us and ours but there is some mess and plenty of fire wood to be had a few miles away. Could have been much worse.

The tenderloin and fatty were very good and well appreciated by friends we were helping clean up after storms last week. Pecan is now one of my favorite woods as it is mild and sweet for those light meats like poultry and tenderoin. I will say I still prefere apple and oak together but Pecan is a nice alternative to the apple.
