howdy all..I,m new here.. I found this site while searching for a recipe for a cure for buckboard bacon..still looking.. so far I have found commercial cure kits. but no actual ingredients.
Anybody point me in the rite direction? Many thanx

first off.......welcome........you need to head over to rollcall and introduce yourself........what you are smoking on, etc.

cures can be prague powder #1 or #2.......i myself use tenderquick....its a morton product.......most grocery stores carry it in the spice section

I don't deal with curing much. I am sure some other will be along to help with that.
In the mean time if you don't mind drop by Roll Call and introduce yourself. Just tell about yourself. The equip. you use and so on.

Hey Gord ...here is a recipe from another member " Smoked " , I have not tried it , but others have and say it's good , give it a go and let us know

Smoked recipe for buckboard bacon;
yea I did a couple of buckboard's using shoulder blade that I trimmed out the blade and all.....also been doing canadian bacon. for the buckboard I used the following:

2 lb shoulder (each blade ended up about a pound each)
1/3 cup molasses
1/4 cup kosher salt
3/4 cup brown sugar
2 Tbs liquid smoke
1 Tbs garlic powder
1 Tbs onion powder
1 tsp prague 2

let shoulders sit in cure for 2 weeks flipping daily, when ready wash and sit in cold water bath 2 hours, then allow to dry and form a tacky surface, smoke 200 until internal at 140

I used apple wood as well.....has turned into my favorite wood

Then head over to roll call so everyone can give you a proper welcome ,

Hey Gord... a point: Nitrates can be a poison. Or a Godsend. Read, Sir, read- and follow directions. And stop into Roll Call and give an intro so we know where yer at- helps us give better answers.
