Any tips for smoking goose? My neighbor shot 3 this morning and asked me to smoke them. I've done alot of turkey and my intention is to pretty much follow the same formula as I've done with them; inject with a simple cure pickle (water, salt, sugar and sodium nitrite), then smoke to 152 deg. internal temp. Thanks.
