A transplanted Kansan to the natural state actually. My wife bought me a Horizon horizontal smoker for my birthday (great isn't she), and I'm just starting to get it figured out. I've recently done spare and baby back ribs, and did a couple chickens this past weekend. We are entertaining this weekend so I'm going to try my hand at a brisket. Wish me luck! Great site!!

I've done several briskets using this method & have never been disappointed. Besides the sweet lady that runs that site is a regular here.

Welcome to smf glad to see ya here. Brisket is totally great smoked. I did one not to long ago and will be doing more in the future. They are a liitle time consuming but very very well worth it!!!!!!!Best of luck.
 
Welcome and check out the search engine for brisket. The "Okie" method seems to rule. It does at my place anyway! And be ready for a long smoke. A case at least heh! Enjoy!
