Hello all, I am Paul Wise, aka; Tall Fat Crippled One! I have used my parents electric smoker a couple of times to smoke a turkey and a bunch a chickens in the past few years. Last year, I bought myself the CABELAS 7 in 1 gas Smoker from Masterbuilt. I LOVE this thing, and I am finding out that I am starting to smoke alot more often. It's December 8th, and I am going to smoke a turkey, (again), today. But I am going to try something different! The turkey is just too big, (18.2lbs). So I am going to cut it in half, and put half of the bird on one shelf and half of the bird on the other. I will put my probe in the breast of the top half, and wait until it gets to 170 degrees. I will post back and let you know what happens. Hey, you will never know what happens until you try!!!

Btw, if you've got room to do it you might want to put a pan under that turkey to catch the juices. It'll make a great gravy or sauce!!
 
Welcome aboard Paul. Sounds like a good plan for a bird that large so it doesn't stay in the (" Danger Zone..40*-140*deg )" to long. Good luck and le tus know how it works out.

That is an EXCELENT IDEA about catching the drippings! I will definately figure out a way to do that in my smoker. I love making gravy's and sauces from drippings in the house. Why not do the same with the smoker!!
 
Welcome aboard Paul!! It sounds to me like splitting the bird would be a real good idea, I hope it goes well.

You will be among some of the best company on the web here. Whenever I've had some question or thought, or even wondered how to do something, I've just come here and searched for an old post. Or posed the question to the masses. Either way I always manage to get an answer.

You should put your probe in the thickest part of the thigh, the breast will likely be done a little sooner. Should be great ... keep us posted!
