Hello everyone....I just purchased some nice, meaty beef ribs this week and I'm looking to smoke them tomorrow. Would I cook them with the same 3-2-1 method that I've used on pork ribs?

"Dino Bones" have alot more fat on them than pork ribs, so there is no need to foil them. I do them quit often and they are very good.

My suggestion: Smoke at 225*-250*. Treat like pork ribs (rub w/ mustard and favorite rub). Place bone down for 1.5 hrs, then spritz w/ favorite mop/spritz. Do this then every hr until done. Look for the "pull back" from the bones. I like my bones medium, so a small rack will take around 3-3.5 hrs, longer for larger racks. Again, the beef ribs have lots of fat in the meat so there is no reason to foil.

I have a good post on them here somewhere, but lost the photos to the Image host screwing around. At any rate, beef does not need to be as done as pork does, so will not take as long. I usually go around 3 1/2 to 4 hours tops for great ribs. Try marinating in Mojo over night. Excellent.
