Up at three am for first butt

Here I am on this wonderful message board at 4 in the morn', California time. I arose at three to fire up the smoker and get my first pork butt ever in for it's kiss of the smoke. I got the butts from costco. 11 pounds all together in a sealed package. There was to in the package, I'm guessing a 6 pounder and a 5 pounder. Coated them both with mustard and then put Jeff's rub all over them. I'm giddy as a schoolgirl just thinking about what is happening inside the smoker right now.

Thermometers are set in both of them. As per what a lot of you guys have written. I have the therms set to go off at 170, at which time I am going to foil and finish off in a 240 degree oven untill they hit an internal temp of 200. I did make a mixture of apple juice and Jack Daniels and I guess I'll begin spraying in a couple of hours

I started so early because the wife decided since there was going to be so much food to invite a bunch of people to come over on Sat nite. Well that made me nervous because all of you guys have written not to smoke the same day as the party as you just don't know what is going to happen. Oh well. I f anyone has any suggestions as to my method, please let me know wether to change something up or not
 
Just one suggestion:

Be SURE to reserve some of the Jack for the chef!

I bought an extra big bottle of Jack just so there was enough extra
 
1 cup for the spray rest of the bottle for you! Like those odds! Man you got me thinking smoke!

Sounds like a great plan. Nothing better then watching the sun come up with the smell of the thin blue smoke in the air.

Well, it is now 7 am in the morn and my first butt just hit 160 and the second one should hit 160 any time now. That first part goes kind of quick. Still waiting for it to hit a plateau. My entire condo complex smells so good. I can only imagine that the smell has wafted through to everyone else around. They are fixin to wake up and be a little bit more hungry than normal.
Wait a minute, what am I saying. I have been up since three tending the smoker, and I am starving. Is it too early to have a drink of Jack Daniels?
 
Sounds like you did your home work, good plan!! If time allows, remember to let them rest for 45 minutes or more before pulling. Man, I'm getting hungry just thinking about it

Unbelievable, they are at 170 already so i wrapped them in foil and sprayed a lot of my apple jack spray in with them. They are now sitting in the oven where they will remain until they hit 200. Is there a minimum and a maximum time to let them rest before I pull?
My wife just woke up and said the house smells like a barbecue joint. I took it as a compliment
 
If you wrap them in a couple old bath towels and put them in an insulated cooler, they will stay hot for 3-4 hours. I leave a digital thermo probe in them so I can keep an eye on the temp as they rest in the cooler. If they get below 150, I would pull them and serve. If you need more time before serving, pull them, and put them in a baking pan with the juice from the foil, cover with foil and put them into a 250F oven to keep warm.

One of my butts just hit 192 degrees. It never really hit a plateau period either. Have any of you guys just cruised through a butt this quickly? I't really only been of the heat for 6 hours. I know from this forum not to trust time but trust the therm, but it seems strange that it has been this quick. I have even readjusted the therm to make sure and it read the same thing. I'm still planning on pulling it off the heat at 200 and placing in a cooler
 
Once in a while I have a butt cruise to being done without a plateau. I always consider it a gift of some extra time and less fuel.

no it is not too early for mr jack. just remember your on a mission and pace yourself....im just kidding, thats what power naps are for. i bet your eating before the sun goes down. what part of california are you from?
 
I'm down in San Diego. I see your from the OC. We'll have to get together some day and compare food and notes
 
absolutely, some of us from the west coast have been talking about a smf gathering for our whole coast, so; you and i would have to go north, but it would be well worth it. i love san diego by the way, i built my dad a house in cuyamaca which is by julian hwy79. and built a german resteraunt in chula vista.
 
Always plan on some snackin' stuff for the chef, not to mention the brewskies.
