Cut the skin into small squares or pieces, deep fry them, little salt or bbq seasoning......There ya go! Homemade pork rinds (sorta). As Alton Brown would say "them's good eats"! PDT_Armataz_01_34.gif

Lookin good Johno!!! Deb was right earlier, people here would freak if they got ribs with that skin still on it. We are a spoiled lot...
