Fatty question

From what I have seen here the sausage of choice is Jimmy Dean. What I am wondering is, have any of you guys tried any other kinds? I have some venison sausage that I made and was wondering if anybody has made their own sausage then used it to make a fatty. I hear these are very good and have some venison sausage that I might try.

Really it is worth a test run at the least. Keep testing and share the results so that if it does not work out we all do not need to learn the lesson the hard way
