Has anyone tried smoking chicken thighs to, say, 160*, then storing them in the fridge a few days, then grilling them on a hot grill for a few minutes? If so, how long do you grill them? Should just until you get some good grill marks be long enough?

A couple of days ago I smoked 12 pounds of turkey drumsticks.  I then have been warming them up on a hot propane grill to help crisp the skin and warm up the drums for eating.

I think it took about 5-6 minutes in the flame of the grill for about 4 turkey drumsticks at about 3.5 pounds of drums.

I feel the same thing would work for you and your thighs but you may not want to go so hard on the thighs with the flame like I did with my turkey drums.  I wanted to make sure the skin was crispy, you may not have that issue.

In any case as long as it is warm to eat you are good to go and it shouldn't take more than 6-8 minutes for a few thighs on a hot grill because it would likely take no longer in the microwave to warm up  for eating.

Have at it and let us know how it turns out :)
