Smoke meatloaf!

4 pounds 80/20, two cups cook quinoa(had 4 garlic cloves minced in it) grated cauliflower, squirt of mustard, pepper salt, onion powder.
2 eggs

That's it keeping it simple as the boys aren't into hot spicy things right now.

Might brush one with BBQ sauce.

14.5 WSM top rack, water pan foiled for drippings no water. KBB Professional with cherry wood.

Should mention the loafs are resting on AmazeN Smokers QMats.

Gonna run 265-300. Until loafs hit an IT of 165.

Standard side light method. If you use a vertical charcoal smoker or a BBQ and you aren't using this method you're wasting time and fuel.

Weber added the range feature back in. Connectivity still sucks have to keep
Turning the unit off and back on and resetting everything. Even if I leave my phone right by the unit. This was an early glitch iGrill had that they fixed. Obviously Weber screwed that up...

Fireboard is in my futures.

Pit settled in at 225 so we'll see how that goes with my dinner schedule. May be fine and the loafs will get more smoke!

Man, I need a rack like that. Sweet! Looks like 1/4" mesh from hardware store

Go visit Todd at AmazeN Smokers and order some Q-Mat material. Sold by the foot in a couple widths. Cut to whatever shape you need.

Honestly though as I Mentioned in your thread quick freeze and all will be good. Before I had the Q-mats I did all mymeatloaf and fatties direct on the grate.

I know! We pay a premium here for meat. At times pork belly is less expensive than pork butt!

Kind of got no freezer space at the moment helping a buddy store some antelope (sausage makings). So
Once that moves out I'll be able to buy another whole round and do some grinding, slicing, jerky making!

Proper forest management is what we need! Have needed for years. But that's politics and we are going to kill it right and not talk about that anymore.

This is crappy ground beef compared to what I grind. But it's okay. It will still eat and that's the end goal. So everyone wins!

Been that way here for decades as well.. I agree, not the forum to get into it.. It's dead.

The air is so thick here right now it looks like all of the SMF memebers, yes all gathered at the same time in a milradius and started smoking meat.

Doesn't smell as good. In fact everything here smells like a dank old ashtray one would find at a defunct Elks, Moose, or... club.

West is burning, East is drowning. Ughhh.

I haven't done a meat loaf on the smoker yet, might have to pass one by the fam and see what they think!

Just from what you did there, would you recommend a less lean mix, say 75 / 25, or is the 80 / 20 the best bet?

Let me introduce the best ever hangover cure known to man.

The Dirty shoe.

Consists of two pieces of English muffin bread (cannot be substituted) toasted in bacon grease. Topped with a smoked meatloaf, bacon and a fried egg.

That's it.
