Today I kept my smoker busy and myself too in the kitchen and on the patio.
I went for broke with three entrées and a side.
I'm posting these three in each one's respective sub-forum.

Pork Belly Burnt Ends

Cube up a few pounds of fresh pork belly
Rub and bag up to sit over night
Lay them out for smoking while to pit comes to temp, 225'-250' with Cherry for smoke
Smoked till I had a real nice color and an average IT of 155'
Then I panned them, added more rub and BBQ sauce, covered and returned to the smoker
About an hour covered and another hour uncovered

These came out fantastically scrumptious!

Yeah, my Costco had entire bellies with attached ribs, and they had belly cut into 1" thick strips.
I bought the strips, perfect for doing these burnt ends, just cut into 1" chunks.

Looks beyond awesome! Pork belly burnt ends are on my short list to make. Think I'm making them for Labor Day weekend. I'm trying to stay out of a rut and looking for different things to make besides the standard bbq fare. I cook for a lot of events during the summer so it's always the usual stuff. Ribs, pulled pork, brisket and turkey. I don't get to smoke too often just for myself.

I will be fully retired in about 6 months so I will have more time to be creative for myself. I hope I can make dishes that look as good as yours do!
 
Alas, I couldn't do it this time, spent too much already.
But one of the butchers said, "We just started carrying it due to demand, it'll be here regular now."
I know that feeling.

This post truly inspired me.....

I just left Sam's club.....

I had no intention of getting anything. Just killing time on my lunch break.

I had read through this post this morning and then, as destiny were to have it, a package of pork belly already cut into strips was laying in the cooler just for me.

I couldn't pass them by because the pictures of your ends were still in my head.

Guess I will add this to the menu for Saturday!
