Hello! I'm so excited to learn how to make meaty, smoky, deliciousness! Bought myself a Rec Tec mini, because a co worker had one and kept bringing me samples of everything they made, telling me how easy it is. So- here I am!! I'm hoping I learn fast and don't screw up too many times before grasping things. I'm ready to hit the ground running! Woohoo!
 
I still consider myself somewhat of a novice but my 2 cents...... I believe 50 to 75 percent of the fun is trying new things and new ways to prep and smoke. I do lose consistantcy from always trying new ways, but always enjoy the finished product.I like to say "imperfection is perfection". Also always remember every piece of meat varies so sometimes you just get one that is better than another. The important thing is to have fun, and try to learn something with every cook. This site is AWESOME for info and ideas! Enjoy.
