I smoked a rack of spareribs, intending to cook it for dinner. It was past 7 and finally decided it'll just be what it is. However, it wasn't done (internal temp was 160, so it won't hurt anyone but won't help either) and made a bonehead decision to just wrap it and put it in the fridge and finish it another day. But now I don't know what to do. Do I just trash it, or would finishing it in the smoker or oven be worth the effort.
