Out of pulled pork, saw that pork butt's were on sale ($1.78/lb), weather was going to be good today. It was a great combination.
First time smoking a butt on our DG offset, it had also been awhile. Not the wife's favorite, but my daughter loves it.
If you're looking for the best information on smoking a pork butt, BearClaw's post is probably the best out there. I'm pretty much following it.
Rubbed the big girl (she was about 10 lbs.) yesterday afternoon. I use my own pork rub recipe that I've been using for a few years:
Servings: Two 10lb butts
Ingredients:
1c Brown Sugar
1/3c Paprika
1/8c Salt
1/8c Seasoned Salt
3/4tbl garlic powder
3/4tbl onion powder
3/4tbl cinnamon
1/4tbl pepper
I scored the fat cap, but really didn't do much trimming.
Wrapped it in plastic wrap and let it sit overnight in the fridge.
Fired up the smoker about 8:00a (I'm a late riser on a Sunday). Kind of cool this morning, so it took awhile to get the DG fired up to 220. Using Kingsford briquettes and cherry chunks for this one.
Put it in about 8:50a.
Bottom pan is our water pan. Never smoke without it. I have a drip pan below the pork butt. (Lost a lot of heat taking this picture as I didn't want a rub covered phone).
I added some fuel around 10:40a, pretty typical with briquettes.
I added my thermometer around 1p and checked on the water in the pan. Initial IT was 131 at the tip of the probe, and 124 in the cold spot.
Had planned on pulling her around 165, but some storm clouds started forming. Here, about 5 miles south of Lake Erie, they can come up at any time.
So, I pulled her at 158 IT, drained the drip pan into an empty beer can, wiped it out and put it in there. I poured some orange-peach-mango juice over her, then double covered her in foil. 15 minutes later, it was pouring down rain.
An hour later, and we were only up to 165 IT. Kind of worried. Two hours later, still raining, temperature still stalled around 173 IT. If you're doing the math, it's getting towards 7:30p.
8:00p, it stops raining. I add more fuel. Finally, around 9:00p, I pulled it at 186 IT. Shouldn't have been a 12 hour smoke. When I hustled to put the butt back in before the rain, I didn't latch the door completely. While the rain had a part in it, my dumbass attack, probably cost me a few hours as I couldn't get things back up to temperature.
However, it all turned out OK. I took it out and that's when I discovered the door wasn't completely latched. covered it with a towel and let it rest for about 45 minutes, then stripped it. Was kind of peeved at myself, about the door thing, so I didn't get any pics of the finished product before I stripped it.
Did get the finished product in the pan (from 10:30p):
And the freezer now has pulled pork:
