We have been doing this trip for the last 20 or so years. All the Cousins, Nephews, Uncles, and Brother-In-Laws get together for a fishing trip out of Venice, Louisiana. The menu is always wild game/fish/seafood.

We have a neat little tradition. We have what is called the 'Rusty Hook' Award. It is given out to the individual that has the most memorable moment on the fishing trip. There have been some hilarious incidents which have won over the years. We are currently on plaque #2, The first one having been filled up with names...



We have a really good time. And this year will be no different.

The menu AS of now is as follows:

I am bringing pulled pork for the picky eaters. I just pulled it from resting in the oven and have it cooling to pull...

I am also bringing a sample Charcuterie plate of wild hog sausage, goose pastrami, wild hog canadian bacon, wild hog smoked sugar cure ham, goose mortadella, smoked venison and pork sausage, and smoked honey glazed wild turkey....with an assortment of cheeses and crackers.

On the list this year that I know of are as follows:

grilled tuna steaks

crawfish ettouffee

grilled elk steak bites

Bacon wrapped duck poppers

fried snapper, frog legs and shrimp.

wild hog green onion sausage

wild hog fresh sausage

smoked rabbit terrine

chargrilled oysters with balsamic vinegar, basil, and sundried tomatoes covered with Parmesan cheese....

That's all I can think of right now, there is always more than I can eat......I think my cousin on the west coast is bringing fresh Dungeness crab and some salmon....not sure on that though.
 
Thanks fellas. The wild hog hams are drying now after sitting in the cure for 5 days. I'll mix up the brown sugar, cane syrup and black pepper glaze an will post pics.
 
Iv'e always wanted to go offshore from Venice and get in on the yellow fin tuna bite, but I haven't made it yet.     Your family has a great tradition and it looks like nobody is going to go away hungry.     Congratulations.
 
That sounds like a GREAT gathering, and I love the rusty hook award!  I'm sure there are more than a few tails regarding that board!

We do have fun Cranky.... That award implies that one is a bit 'Rusty' with his sea legs and fishing skills. It has provided numersous laughs over the years!!!

Sugar glaze mixed up ready to go!

Brown sugar, Cane syrup, and Black pepper


Plan is to put some smoke on the hams for about 2 hours, then start coating them with the glaze. I will not hang them in bags because I want to pull them from the smokehouse and put them in the oven to finish @375* to caramelize the glaze a bit. More pics. when I put them in the smokehouse.

You definitely need to do it. Trip of a lifetime. Venice is #3 in the world for yellowfin tuna fishing and is a top destination around the globe. We meet people from around the world every time we go there. It's awesome just to sit in the gulf breeze on the restaurant patio and watch the charter boat come in and unload their catch. You will see everything from Trout to swordfish and everything in between....

Close up...you see those bubbles on the right? That is where I put my nose when I pulled them out of the oven. Wow, I wish SMF had scratch and sniff smilies!!! LOL!!

This is one tender little piggy!!! Putting the hams in the oven jacked up to 375* made for a really juicy little ham!!
Definitely looks Tender & Juicy!!

Well, the trip was a success. After 2 days of fishing, we ended up with around 100lbs. of cleaned snapper fillets that were split up amongst the family. Everyone brought home some great eating fish fillets. The food was outstanding as usual, and the weather was perfect- variable 5 knot winds for 3 days. Could not have asked for better! The charcuterie plate was a huge hit. surprisingly, everyone loved the goose mortadella and the wild hog ham the most.

Thanks ABC, It's a real hoot of a time every year. Fish or no fish-we still have a good time, though we have been extremely blessed with a long run of catching fish on this trip...Seems the stars always align for the dates we schedule...
