The freak out!!!

So here I am haven't smoked anything in a while and my daughters second birthday is tomorrow.  I have 2 thermos on my CGO modified with plates duct work... I have a 17 pound brisket and 2 7 ish pound butts. Temps on the thermos lookd great somewhat even all the way across. Using these kingsford mini hickory splits. about an hour or 2 in heard some sizzling from fat hitting the plates took my one probe and put it in and it was like 275 hitting 280.  IT's as it is right now 4 hours and 20 minutes in are B 160 Butt1 160 Butt 2 154. I know everything should be fine guess I am just looking for some positive mojo sent my way lol

PS Why do we freak out about this could I have really f ed up the meat in the first 3 hours if my temps seem pretty on point this far in?

Thanks guys just wrapped all 3 they started beeping at 165 one after the other BP for the brisket Foiled the butts brisket stayed at 165 butts dropped once i reprobed to 158. guess ill buckle in for a long night

Everything turned out great!!! Got called away on a trial in NE PA and have been gone almost 2 weeks. so no time to update. I think I need a little more practice with the butcher paper on the brisket but everything got rave reviews, Everything was completely off the smoker by 6 am and I headed to bed for a couple hours before waking up about 11 and getting some DWBB's on the smoker. Party was a huge success and what little leftovers we had have been vac sealed and frozen and are awaiting a slow bath in my chili come football season... this weekend I'm gonna do some baby backs, chicken wings and I found a bone in rib eye roast I cut down into 3 pretty huge steaks. I am thinking I can going to plop one of those on there just to see.... thinking a few ours on the smoke then a reverse sear on the gas. Still undecided.

P.S. no such thing as too many beers to eat lol. I make sure on my long smoke sessions I don't start drinking until usually 10 or 11 pm and make sure I get a good quality all day beer like Firestone Walker Easy Jacks or in a pinch old faithful miller light cans lol Big problem is when some of my buddies who work and manage bars start showing up at 4 am or later with bottles of scotch and stuff. the test starts then... I don't know if its me getting older or what (38) but I notice I enjoy the longer sessions more now... appreciate watching the sun come up more than when I was younger. the peace and quiet too maybe.
