Fried Drums on the Kettle

Used Chris technique for smoking chicken around the Vortex

Brined the Drums over night paper towel dried 

Dredge in seasoned flour I over did the flour 1st timer LOL


Dredge in flour the into the fridge for a few hrs


Lit a half chimney of KBB added some Cherry Chunks into the Vortex


Kettle was screaming Hot 500* 


Turned them after 20 minutes finished in another 20 

40 minutes pulled at IT of 185* I like them dead


Plated with Mac & Cheese

No Egg wash and yes the skin is crispy

great taste I like the old style better,I may have over cooked this with that type pasta.I will try again with a heavier pasta

Those look great Richie! I love the weigh it mimics the taste and texture of fried chicken without having to deal with mess of deep frying. Points for sure!

Glad it helped! I have used a few different brines and marinades prior to breading and they've all worked out great! I have some bone in chicken thighs thawing the fridge... I might have to kettle fry them after seeing your post! Maybe I'll try my souvlaki marinade. Greek fried chicken!

Come to think of it I haven't done smoker fried pork chops in a while either, hmmm.

Case Chops sound good I just picked up a whole Loin for $1.50 # made some boneless chops and roast
