Umai pepperoni issue

Im sitting on some Umai pepperoni in 50mm casings.

Its going  on 9 weeks in my commercial fridge at work. I took one today and cut it at 35%. It tasted great, looked great, smells great.

My only issue is the outside of it is sticky. Its like its got a film on it but doesn't smell bad at all.

Should I just rinse it off in warm water?

Not sure about that one, Honda. You might check the UMAi site.
 
I would do as you said, rinse then dry the outside.
 
Well, I trust in my methodology, and cleanliness. As mentioned it didn't smell off, I took a couple slices. I am happy to report I am typing this today. I finally got a hold of an old friend who used to be a butcher and he advised the same, to rinse with tepid water. It all came off and it doing well today. Ill take a few more slices to test and let the rest run its course until 40%. Ill take a pic or 2 shortly.
 
Here is another question though- How do you store it? Counter? Fridge? Wrapped? Not wrapped?

Depends on how you plan on using it. I throw one in the fridge for immediate eating, the rest I vacuum seal individually and toss in the freezer. You can freeze whole, or slice if you're vacuum sealing.
 
With the Soppressata, I sliced them and vac sealed into little packages to thaw and snack on when wanted.

Vac seal it or brown paper bag if you plan on whooofing it all down...LOL. For my own consumption i use the brown bag, if its going for a gathering i vac seal it.

Yeah it should be shelf stable out of the fridge but why take a chance on your product going bad
