Hello.

Thinking about going for an offset smoker, probably an Oklahoma Joe HIghland (price is large consideration - fixed income), but have always enjoyed indirect slow-smoking. I'm thankful for the opportunity to have access to such a wealth of information, and will enjoy perusing the work and wisdom of those with more experience than myself.

After my oft-used old Weber finally caved in to the ravages of time, I've been using a cylindrical water-pan double-rack smoker, which actually is pretty good. My father got tired of it, and I've gotten some pretty good food out of it.

I'll be working on trying to locate/figure out a good vinegar-based marinade and finishing sauce recipe this summer, and trying to find someone who needs a seasoned hickory tree removed from their property.  :-)

Glad to be here, and I look forward to learning more about spending quality time starting at the smoke drifting out of a smoker, contemplating life, and listening to the Cardinals on the radio.
